Jaywal’s vegetarian recipe for this week is a spicy bean dish which has us actually getting excited for next Monday! Check out the recipe below and let us know if you give it a try!
Beans, Some Like It Hot!
Simmering in the coconut milk, ginger, garlic and a melange of spices, these beans don’t skimp on the heat. So, if you want a milder version, be sure to adjust the seasonings.
Ingredients
1 – 14 ounce can coconut milk
4 tablespoons minced fresh ginger
1 teaspoon of salt
2 teaspoons ground turmeric
2 teaspoons ground cumin
2 tablespoons chilli powder
1 tablespoon curry paste (I used red curry paste)
3 cloves garlic, minced
2 tablespoons chopped fresh parsley (I use cilantro instead)
1 – 14 ounce can black beans, drained and rinsed
1 – 14 ounce can kidney beans, drained and rinsed
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
Directions
Stir the coconut milk, ginger, garlic and parsley (or cilantro) into a deep skillet over medium heat. Season with salt, turmeric, cumin, chilli powder and curry paste. Bring to a slow boil. Stir in black beans, kidney beans and the red and green bell peppers; simmer, stirring often, until about 1/3 of the liquid is evaporated and the sauce has thickened, about 30-45 minutes. Cover, and let cool for 5 to 10 minutes.
Serve over a bed of rice.
